Carrot Halwa(Gajar Ka Halwa)

 Without beet root                                                           With beet root  

Ingredients -

 3 bags - Carrots
1 litre --  Milk
1 tsp      Cardamom seeds                                             
3 tsp      Ghee
2           Raisins,Almonds,Pistachios
2  cup   Sugar
1           beet root  (Grated)
4 tbsp    Ricotta cheese
Method
Wash and grate the carrots.
Cut carrots in 1" circle shape (or any other easy for grinding)put the milk in blender such tht it shd cover all the carrots .
Grind them and put it on wok at medium(for 5 min then low )  till all milk is absorbed by it on low falme only .(abt 45 min-1 hr)
Add ricotta cheese .And grated beet root it will give the colour the halwa.
 Soak the raisins in water for 30 minutes. Cut and shred the nuts.
Mix them serve .
Tips
Tradiionally ,Carrot is peel then shred and then it is made .
Beet root gives the orange colour carrot a colour .
Cheese can be replaced by mawa or milk pwdr.
