Salsa



Salsa is the word for sauce in Spanish.  Salsa means tomato packed spicy condiment served with Corn chips .Also a sauce made with chopped vegetables .Its is ideal summer time recipe and low fat diets.Chips  salsa a perfect combination for  evening snacks. Make in seconds look good even as a starter  .Best part is any favorite  veggies with tomato, basil and onion  yum yum ..Oops !! I am soo damn foodie now . ...I feel it like  a type of Indian chutney(I am so correlating). I use this salsa as a puree when I am short of time to make a Indian curry with chapati ..(EASY LAZY dish )


Ingredients
1 large ripe tomato
2-3 Green Onions
1/2 cup fresh Cilantro leaves
1 clove garlic
1-2 Jalapeno
1 tsp cumin
2 tbsp Lime juice
Salt
Method 
Cut and blend the tomato(no seed)
Chop green onions and grind
Rinse and pat dry the cilantro leaves
 Process until smooth
Add all the ingredients .
Leave the  texture of sauce .
Refrigerate for  4 days .

Variations
Pimiento Salsa -In a blender or food processor combine or roasted red peppers drained ,1 seeded jalapenos pepper ,2 clove garlic ,2 tbsp olive oil ,2tsp vinegar and 1/2 cup Cilantro .

Green Salsa -1and  1/2 cup fresh mint ,cilantro leaves , trimmed Scallions ,1/4 cup lemon Juice,2 cans green chili ,1 tsp red pepper flakes.a

Pantry Salsa - Combine 1/4 cup Olive oil , 1 med size Dill 2 tsp, olive Paste ,1 can Anchovies,Crushed Tomato .   Process it and taste with the salt

Gazpacho Salas -Combine and blend 2 Tomato ,1 green and red bell peppers , 1 med size Cucumber ,2 tsp Vinegar,salt , pepper  Process until smooth and adjust seasoning.

Creamy Corn Salsa - Pat dry corn kernels and place them in blender. Rinse the cilantro pat dry and add vinegar. Seed the jalapeno and blend Process it  to make smooth Trim the scallions and add the salt keep refrigerate for 2 days .

 Bean Salsa - -1 can bean (soaked and boiled) Combine and blend 2 Tomato ,1 green and red bell peppers , 1 med size Cucumber ,2 tsp Vinegar,salt , pepper  Process until smooth and adjust seasoning.
Anchovy ,Caper and Pepper Sauce -Peel and mince Garlic Finely chopped Anchovies and capers Stir  until blend. Add diced peppers and lemon juice
