Curd(Raita)
Tadka Curd
2and 1/2 tsp ghee 
1 tsp mustard seeds 
1 Green Chilli Chopped 
1/2 tsp cumin
1/2 tsp Red Chilli pwder 
1/2 tsp Coriender pwder
1/2 tsp turmeric 
1/2 tsp Salt
1/2 tsp Amchur pwder
1 red chilli whole 
Method 
Prepare the seasoning .
Beat the curd and add seasoning in it .
Palak(Spinach raita) /Bathua 
Boil the spinach
Beat the curd add the blended spinach in it. Add spices .
Veggies Raita 
Boil potato and chop it add finely chopped onion,greenchilli,tomato .
Cucumber Raita /Lauki (Bottle gourd Raita)
Grate Cucumber,  add in the beaten curd and Mix spices (tadka can also be added).
Enjoy with khichadi  or  cold summer afternoon 
Fruits Raita 
Chopped the fruits and add  in the curd .Add chat masala .
